The primary symptom of acid reflux disease is heartburn, a burning sensation that rises from the stomach through the esophagus to the sternum or the throat. Ingredients:

1 package white angel food cake mix
1 cup fat-free (skim) milk
1 package 4-serving size sugar free milk chocolate instant pudding and pie filling
2 cups frozen (thawed) reduced-fat whipped topping
1 small package chopped nuts (of your choice)

Instructions:

Place pudding mix into a large mixing bowl. Pour milk into center of pie filling. Beat until dry powder is totally moistened. Thaw frozen topping and mix into pie filling mixture. Follow the directions on cake mix for baking an angel food cake. After cake is baked cool completely. Cut cake in half. Take one half of the pie mixture and spread evenly onto bottom layer of cake, spreading all the way to the edges. Place top layer of cake over the pie mixture on the bottom half of cake. Spread the rest of the pie mixture over the top of the cake. Mixture can be spread down the sides of the cake. Place in the refrigerator for no longer than 1 day. Serve with chopped nuts over the top.

Ingredients:

3 cups egg whites
3 tablespoons soy sauce
1/4 teaspoon ground black pepper
1/2 cup diced onions
2 tablespoons chopped roasted green chili
6 tablespoons chopped fresh chives
1/2 pound soft tofu
1 teaspoon turmeric
1 fresh tomato, peeled, seeded and diced
2 garlic cloves, minced
1/8 teaspoon ground cumin

Instructions:

Beat egg whites until broken up and they start to foam in a small bowl. Add finely crumbled tofu to egg whites and mix. Next, add in the soy sauce, pepper and turmeric and set mixture aside. Over medium heat, combine and cook tomato, onion, cumin, garlic, and green chili in a large frying pan. Cook until onions are see-through and all liquid has evaporated. Add tofu mixture to the skillet and stir well. Scramble complete mixture until egg whites have been cooked completely. Once scrambled sprinkle with chives and serve.

Ingredients:

2 cups skinless boneless chicken breast, cooked and cubed
1/2 cup light sour cream
1/2 cup chunky salsa
2 tablespoons light mayonnaise
1 cup shredded cheddar cheese
1 cup shredded lettuce
4 cholesterol free flour tortillas about 10 inches in diameter

Instructions:

Combine salsa, mayonnaise, and the sour cream. Then mix in the cheddar cheese and chicken. Evenly scoop onto the tortillas and sprinkle with lettuce. Fold over the sides and serve.

6 cups Baked Cheddar flavor corn snacks
2 cups fat-free pretzel sticks
2 tablespoons reduced-fat margarine, melted
1 teaspoon chili powder

1/2 teaspoon garlic powder
1/4 cup grated Parmesan cheese

Instructions:

Pop popcorn according to package directions. Put popcorn, baked corn snacks and pretzels in a large bowl with a lid. Put melted margarine in a separate bowl. Add chili powder, cumin and garlic powder and blend together. Pour over popcorn mixture. Cover bowl and toss to coat. Sprinkle cheese on top. Preheat oven to 300 degrees F. Put popcorn mixture on an ungreased cookie sheet. Bake 10 to 12 minutes. Remove from oven and cool. Place in airtight bowl to store.

1/2 cup rye flour
1/2 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup 2% milk
1 large egg
6 tablespoons Canola oil

Instructions:

Insert the muffin liners into the cups on the muffin pan. Preheat the oven to 400 F. In a bowl add the dry ingredients then combine the wet ingredients and stir until well blended and smooth. Scoop mixture into the muffin cups until they are 2/3 full. Place in the oven and bake for approximatley 16 minutes, or until toothpick comes back clean from testing it in the center of the muffin. Cool on a wire rack and enjoy..

Ingredients:

1/4 cup Dijon mustard
2 tablespoons honey
1 tablespoon chopped fresh oregano
1/4 teaspoon garlic powder
1/8 to 1/ teaspoon ground red pepper (cayenne)
1 teaspoon water
1 pound turkey breast slices, cut into 4 serving pieces

Instructions:

Heat grill. Place mustard in a small mixing bowel add honey and mix. Blend in water. Be sure to blend water into mustard and honey mixture well so no water is standing on top of mixture. Add oregano, garlic power and cayenne pepper. Stir until all ingredients have been blended well. Coat turkey slices on both sides with mustard honey mixture reserving some for basting during cooking. Place on grill over medium heat. Cook 6 to 8 minutes or until juice runs clear. Baste turkey slices during cooking being sure to flip each slice after basting. Can be served on a bed of lettuce and tomatoes for a summer time treat.
